Papas Rellenas is a Cuban dish made with a crispy outer shell, creamy mashed potatoes, and a flavorful picadillo surprise, using ground bison for a delicious twist.
Bring a large pot of salt water to boil and add the chopped potatoes.
Cook the potatoes al dente - about 10 minutes.
Drain them when they’re cooked through but not fork tender and mash until creamy. Set aside to cool.
Meanwhile, add the olive oil to a large sauce pan and bring it to medium high heat.
Add the onions, peppers, tomato and saute until the onions are translucent.
Add the garlic, pimenton, cumin and mix to combine.
Push the onion mixture to a side in the pan and add one tablespoon of olive oil.
Add the bison and allow it to brown, breaking it up into tiny pieces.
Once browned, incorporate the onion mixture.
Add the oregano, tomato paste and olives and stir until the paste is fully distributed.
