Sausage and Kale Thanksgiving Dressing

1: Preheat your oven to 350°F. Butter a 6-quart casserole dish to prevent sticking.

2: In a large Dutch oven, heat 1 tablespoon butter over medium heat. Add sausage and cook until browned, about 6 minutes. Set aside.

3: To the same pot, add leeks, diced butternut squash, fennel seeds, ground sage, salt, and pepper. Sauté until leeks begin to soften, about 3 minutes.

4: Add kale to the pot and stir until it wilts, combining with the other ingredients.

5: Stir in the chopped bread and remaining butter until all ingredients are well-coated.

6: In a separate bowl, whisk together egg, grated cheese, and turkey stock. Pour the mixture over the bread, allowing it to absorb for a minute.

7: Transfer everything to the prepared casserole dish. Top with extra parmesan, and bake for 40 minutes, until the top is golden and slightly crisp.
